Aromatic hydroxyl compounds, such as lignin and tannin. Described as pleasantly tart to astringent medicinal in aroma and taste. Descriptors include bitter, burnt, green, dusty, silky, smoky, medicinal/antiseptic, and creosote. There are many different phenolic compounds, desirable and undesirable. Phenolic influences can soften during aging.
